How a nut becomes butter


01

Gathering

Fruit is collected from the ground after it falls — never picked. The pulp is removed and the nut kept.

Drying & cracking

Nuts dry in the sun for days, then are cracked open by hand to release the kernel inside.

Roasting & grinding

Kernels are roasted over wood fire and ground to a dark paste. This is where the scent comes from.


04

Churning

The paste is kneaded with water until the butter separates and rises. It is skimmed, boiled, filtered, and left to set.
